Apricot Smoothie
- 6 each Fresh Apricot Halves - ripe
- 1 tbs Balsamic or Red Wine Vinegar
- 1 tbs Water
- 1 each Fresh Garlic Clove
- ½ tsp Fresh Thyme
- 1tbs Olive Oil - good quality extra virgin
Combine apricots, vinegar, water, garlic and thyme and process until smooth. Add oil and process for about 15 seconds -- adjust flavors as needed. Chill
Salad:
- 8 cups Spring Mix - certified organic
- 6 each Fresh Apricots - thinly sliced and ripe
- 3oz Fresh Chevre (goat cheese)
- ¼ cup Walnut halves and pieces
Add crumbled chevre, walnuts and fresh apricots to spring mix. Mix and serve with apricot dressing.
