Apricot Smoothie

  • 6 each Fresh Apricot Halves - ripe
  • 1 tbs Balsamic or Red Wine Vinegar
  • 1 tbs Water
  • 1 each Fresh Garlic Clove
  • ½ tsp Fresh Thyme
  • 1tbs Olive Oil - good quality extra virgin

Combine apricots, vinegar, water, garlic and thyme and process until smooth. Add oil and process for about 15 seconds -- adjust flavors as needed. Chill

Salad:

  • 8 cups Spring Mix - certified organic
  • 6 each Fresh Apricots - thinly sliced and ripe
  • 3oz Fresh Chevre (goat cheese)
  • ¼ cup Walnut halves and pieces

Add crumbled chevre, walnuts and fresh apricots to spring mix. Mix and serve with apricot dressing.
