Japones - Dried

The Japone chile has a very biting taste, and is in the "hot" category - 25,000 Scoville units. If you want heat added to your selected dish, this is the pepper to use. It is frequently found in Asian dishes, and is a good chile for sauces and stir fries. The Japone chile can be used in the spicy peanut sauce recipe in the Fresh Chiles feature. Simply put in a food processor and process to desired consistency - be careful to protect yourself from the pepper dust. You can rehydrate this chile, as with any dried chile, in water until soft and easy to handle if you desire rings, strips, etc.
There are numerous books in the culinary world available at most book stores. The key to dried (as well as fresh) chiles is the numerous applications available - be creative and experiment, especially with regard to the mild chiles to the very hot chiles. Start with small amounts, and add more according to the flavor/heat you desire.
