Anchos - Dried

The Ancho is the dried form of the fresh poblano pepper. Used mostly in sauces and casseroles, the ancho is very mild - 1,000 Scoville units. The Ancho chile has a sweet, raisin like flavor, and is an important ingredient in mole sauce (recipes should be readily available for this sauce). You can rehydrate the Ancho in water - soak until flexible - if you prefer strips, cubes, etc. Otherwise, simply crush dried Ancho, and add to dish of your choice.
