Mesclun More than a decade ago, Mesclun arrived on the plates of many restaurants around the country - Mesclun originated in France and translates into field greens - and has been well-received at food stores packaged and in 3# bulk units, and mostly in 3# bulk units at restaurants, caterers and hotels. The largest producer of packaged and 3# bulk spring mix is Natural Selection Foods, a certified organic grower in California who packages under the Earthbound Farm label. The owners began their growing concern on small acreage in the mid-80's, and have grown to be the one of the largest and highest quality shippers in the country.

Spring mix, while quite fashionable in today's market, is consumed by many who enjoy the convenience and many varieties of miniature lettuce, fresh herbs and edible flowers contained in this salad mix. Not only is spring mix very colorful and flavorful, it generally requires a quick rinse and spin prior to serving.

Spring mix generally contains sweet lettuces and herbs, although more bitter as well as braising mixes are available. Miniature red and green romaine lettuce leaves are a very popular mix, and is sold as a Caesar or baby romaine mix. Whatever your application, there are many varieties of spring mix available today.

Serve fresh spring mix with pecans, walnuts (candied or raw), pignolias, chevre, fresh grape tomatoes (red or gold), fresh mozzarella, fresh ovolini, olives, fresh berries, Asian pears or any fresh pear or fruit of your choice, dried cranberries, sour cherries or raisins. Dress with a mild mustard or fruit vinaigrette to complete this fabulous salad.
